The rating system is one I have always preferred which is out of 20 which roughly speaking equates to five marks each for cooking, ingredients, location and service. I am not sure I will ever give a 20 though there have been a few close calls in the past…but a 12 is not worse than a 19, it is just about how to approach somewhere, time and place, scale too and ambition, a perfect ramen stall could be 12, but it is still perfect
